Two-Tone Peachy Bourbon and Fermented Honey Slush

Description
In this simple, colorful cocktail frozen peach slices are blended with bourbon and fermented honey and layered in glasses with a raspberry-vermouth slush for a late summer sipper that will bring the temperature down.
Ingredients
2½ cups frozen raspberries
⅓ cup sweet vermouth
3 tablespoons fermented honey, divided
2½ cups frozen peach slices
½ cup bourbon
2 tablespoons fresh lemon juice
12 fresh raspberries, for garnish

In a blender combine raspberries, vermouth, and 1½ tablespoons honey. Blend until smooth and divide among 4 small glasses (for a diagonal layered look, tilt glasses at a 45° angle in a muffin tin).

Rinse out blender jar, then add peaches, remaining 1½ tablespoons honey, bourbon, and lemon juice. Blend until smooth and spoon on top of raspberry slush.

Slide 3 raspberries onto each of 4 small skewers and place on top of cocktails.

Serve immediately.
Notes
To make your own fermented honey, stir together 1 cup raw honey and 2 tablespoons water in a pint jar. Cover the jar with a few layers of cheesecloth or a piece of thin kitchen towel and secure it with a jar ring. Let ferment in a cool, dark place for about 2 weeks. The honey should have a mild, tangy flavor when it’s ready.
